Improving a classic muffin
I love bran muffins, but I find most recipes to be really dry. So I set out to create a better bran muffin, and this is what I came up with.
Even more so when making vegan recipes, its can be pretty hard to make a moist muffin that doesn’t taste like its been laced with banana or applesauce.
I developed this recipe as an alternative. I think it tastes better than bakery muffins. They are also an excellent source of fibre!

Better Bran Muffin Recipe
Preheat oven to 400F (204C), and place liners in muffin tin, or grease sides well. Recipe makes 12 muffins,
Ingredients
- 1 cup wheat bran
- 1 cup rolled oats
- 1 cup flour
- 1 cup lightly packed brown sugar
- 1/2 cup canola oil
- 1tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 cup of water
- 1/2 cup raisins
Directions
In a bowl, mix together flour, oats, wheat bran, baking soda, baking powder, and cinnamon.
In a separate bowl mix together the canola oil, brown sugar, and water.
Add all the dry ingredients to the wet ingredients. Mix well, and add in raisins. Mix until raisins are evenly distributed throughout batter.
Place batter into muffin tin (with liners) – fill 3/4 of the way up, and place in the oven to be baked at 400 F for approximately 20 minutes. Remove from oven and let cool.
